  • 0.5 cup Water

  • 1 cup Heavy cream
  • 1 cup Brown sugar
  • 3 cups Pecans

Directions

Step 1

In a medium saucepan, combine 2 cups of granulated sugar, 1/2 cup of light corn syrup, and 1/2 cup of water over medium heat. Stir until sugar is dissolved. Attach a candy thermometer to the pan and heat the mixture without stirring until it reaches 250°F (hard-ball stage).

Step 2

While the sugar mixture is heating, beat 1 large egg white in a stand mixer until stiff peaks form.

Once the syrup reaches 250°F, slowly pour it into the whipped egg white in a thin, steady stream while the mixer is running on low speed. Be careful to avoid splattering.
