Ingredients

  • 2 cups Granulated sugar
  • 1 cup Brown sugar (light or dark, packed)
  • 0.5 cup Salted butter
  • 0.75 cup Evaporated milk
  • 2 cups Pecan halves
  • 2 tablespoons Pecan liqueur
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Kosher salt

Directions

Step 1

Prepare a large sheet of parchment paper or a silicone baking mat on a flat surface for the pralines to cool. Set aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, brown sugar, salted butter, evaporated milk, and kosher salt.

Step 3

Place the saucepan over medium heat and stir constantly with a wooden spoon or heat-resistant spatula until the butter melts and the mixture starts to come together.

Step 4

Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally to prevent scorching.

Step 5

Once boiling, attach a candy thermometer to the side of the pan and cook the mixture, stirring frequently, until it reaches 238°F (the soft ball stage). This should take about 10-12 minutes.

Step 6

Immediately remove the saucepan from the heat and stir in the pecan halves, pecan liqueur, and vanilla extract.

Step 7

Continue stirring the mixture vigorously until it starts to thicken and appear slightly cloudy, about 1-2 minutes.

Step 8

Working quickly, use a spoon to drop the praline mixture onto the prepared parchment paper or silicone mat in small mounds, about 1-2 tablespoons per praline.

Step 9

Allow the pralines to cool and set completely, about 20-30 minutes, before serving or storing.

Step 10

Store the pralines in an airtight container at room temperature for up to a week.
