Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 0.5 cup Pecans
  • 2 cloves Garlic
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Dredge the chicken breasts in the all-purpose flour to coat them lightly, shaking off any excess.

Step 3

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 4

Add the chicken breasts to the skillet and cook for about 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 5

Lower the heat to medium and add the remaining 2 tablespoons of butter into the skillet. Once melted, add the pecans and sauté for 2-3 minutes until toasted and fragrant.

Step 6

Add the minced garlic and sauté for an additional 1 minute, being careful not to burn it.

Step 7

Pour the chicken broth and lemon juice into the skillet, stirring to deglaze the bottom of the pan and incorporate the browned bits.

Step 8

Return the chicken breasts to the skillet, spooning some of the sauce over them. Cover the skillet and let simmer for about 7-10 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).

Step 9

Sprinkle the fresh chopped parsley over the chicken and pecans just before serving.

Step 10

Serve warm with your choice of side dishes, such as rice, mashed potatoes, or sautéed vegetables.
