Ingredients

  • 1 cup plain (all-purpose) flour
  • 0.5 cup brown sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 cup pecans, roughly chopped
  • 0.75 cup brown sugar (for sauce)
  • 0.5 cup butterscotch chips
  • 1.5 cups boiling water

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a 9-inch round or square baking dish with butter or non-stick spray.

Step 2

In a large mixing bowl, whisk together the flour, 1/2 cup brown sugar, baking powder, and salt.

Step 3

Add the melted butter, milk, and vanilla extract to the dry ingredients. Mix until a smooth batter forms.

Step 4

Fold in the chopped pecans. Pour the batter into the prepared baking dish and spread it evenly.

Step 5

Sprinkle the remaining 3/4 cup brown sugar evenly over the surface of the batter.

Step 6

Scatter the butterscotch chips evenly over the brown sugar layer.

Step 7

Carefully pour the boiling water over the back of a spoon onto the surface of the pudding. Do not stir – this is what creates the self-saucing effect.

Step 8

Place the baking dish into the preheated oven and bake for 30-35 minutes, or until the top of the pudding is golden and slightly firm to the touch.

Step 9

Remove the pudding from the oven and let it sit for 5 minutes to allow the sauce to thicken underneath.

Step 10

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
