Ingredients

  • 113 grams unsalted butter
  • 200 grams granulated sugar
  • 100 grams brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 190 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 200 grams crushed pineapple (drained)
  • 120 grams chopped pecans
  • 20 grams powdered sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x9-inch (23x23 cm) baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Fold in the drained crushed pineapple and chopped pecans until evenly distributed.

Step 7

Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 9

Allow the squares to cool completely in the pan on a wire rack.

Step 10

Once cooled, use the parchment paper overhang to lift the entire batch out of the pan. Slice into 16 squares.

Step 11

Optionally, dust the tops with powdered sugar before serving for a touch of sweetness and presentation. Enjoy!
