Rinse the yellow split peas thoroughly under cold running water until the water runs clear.
In a large pot, combine the rinsed split peas, water, peeled and halved onion, and bay leaf.
Bring the mixture to a boil over medium heat. Skim off any foam that rises to the surface, then reduce the heat to low and cover the pot with a lid.
Simmer for 60–75 minutes, stirring occasionally, until the peas are very soft and most of the water is absorbed.
Remove and discard the onion and bay leaf from the pot.
Using a masher or an immersion blender, mash the soft peas until smooth and creamy. Add butter, salt, black pepper, and ground nutmeg, and stir well to incorporate.
Adjust the seasoning to taste, adding more salt or pepper if necessary.
