Ingredients

  • 250 g dried split peas
  • 1 medium onion
  • 1 medium carrot
  • 1 celery stalk
  • 1 liter vegetable stock
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp butter (optional)

Directions

Step 1

Rinse the dried split peas thoroughly under cold water until the water runs clear. Set them aside.

Step 2

Peel and finely chop the onion. Peel and dice the carrot. Dice the celery stalk into small pieces.

Step 3

In a large pot, add the chopped onion, carrot, and celery. If desired, melt the butter in the pot first to sauté the vegetables for added flavor. Cook over medium heat for 5-7 minutes until softened.

Step 4

Add the rinsed split peas to the pot, followed by the vegetable stock and the bay leaf. Stir everything together.

Step 5

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 1 to 1.5 hours, or until the peas are very soft and have broken down into a thick, creamy consistency. Stir occasionally to prevent sticking.

Step 6

Remove the bay leaf from the pot and discard it.

Step 7

Season the pottage with salt and black pepper to taste. Stir well and adjust seasoning if necessary.

Step 8
