Ingredients

  • 500 grams Fresh peas
  • 200 grams Baby onions (peeled)
  • 30 grams Unsalted butter
  • 1 tablespoon Olive oil
  • 100 milliliters Chicken or vegetable stock
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 2 tablespoons Fresh chervil (chopped)

Directions

Step 1

Peel the baby onions and set them aside. If they are large, cut them in half for even cooking.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium heat. Add the baby onions and cook for 5-7 minutes, stirring occasionally, until they start to turn golden brown and soften.

Step 3

Add the butter to the pan and let it melt. Stir to coat the onions evenly.

Step 4

Add the fresh peas to the pan, followed by the chicken or vegetable stock. Stir gently to combine.

Step 5

Season the mixture with salt and freshly ground black pepper.

Step 6

Cover the pan and let the peas and onions simmer over medium-low heat for about 5-8 minutes, or until the peas are tender and the liquid has slightly reduced into a light sauce.

Step 7

Remove the lid and sprinkle the fresh chopped chervil over the peas and onions. Stir gently to incorporate the herb without breaking up the peas or onions.

Step 8

Taste and adjust seasoning if necessary. Serve warm as a flavorful side dish with your favorite main course.
