Ingredients

  • 1 pound field peas
  • 4 ounces bacon or smoked ham hock
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 1 whole bay leaf
  • 0.5 teaspoon hot sauce (optional)

Directions

Step 1

Rinse the field peas thoroughly under cold water and set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the bacon (chopped) or ham hock to the pot and cook for 5 minutes, stirring occasionally, to render the fat and infuse the oil with a smoky flavor.

Step 6

Add the field peas to the pot and stir well to coat in the flavors.

Step 7

Pour in the chicken broth and water. Stir to combine.

Step 8

Add the salt, black pepper, thyme, and bay leaf to the pot. Bring the mixture to a gentle boil.

Step 9

Reduce the heat to low and cover the pot. Simmer for 50-60 minutes, stirring occasionally, until the peas are tender but not mushy.

Step 10

Remove the bay leaf and discard it. Taste the peas and adjust seasoning if needed. Add the optional hot sauce for some heat, if desired.

Step 11

Serve as a side dish or over rice for a complete meal. Enjoy!
