Ingredients

  • 250 grams Pasta (penne, fusilli, or spaghetti)
  • 1 cup Frozen peas
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)
  • 0.5 cup Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant but not browned.

Step 4

Add the frozen peas to the skillet and cook for 2-3 minutes, stirring occasionally, until warmed through.

Step 5

Reduce the heat to low and pour in the heavy cream. Stir well and let it simmer for 2-3 minutes, allowing it to thicken slightly.

Step 6

Add the grated Parmesan cheese to the skillet and stir until the cheese has melted and the sauce is smooth.

Step 7

Season the sauce with salt and black pepper. Taste and adjust the seasoning if needed.

Step 8

Add the cooked pasta to the skillet and toss to coat it evenly in the sauce. Use the reserved pasta cooking water, a little at a time, to loosen the sauce if needed.

Step 9

Finish with freshly chopped parsley, if desired, and give the pasta one final toss.

Step 10

Serve warm in bowls, optionally garnished with extra Parmesan cheese.
