Ingredients

  • 2 sheets frozen puff pastry sheets
  • 1 cup frozen peas
  • 3 ounces feta cheese
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon zest
  • 1 egg
  • 1 tablespoon milk
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Allow the frozen puff pastry sheets to thaw at room temperature for about 10-15 minutes or according to package instructions.

Step 3

In the meantime, blanch the frozen peas in boiling water for 2-3 minutes, then drain and rinse under cold water.

Step 4

In a small bowl, mash the peas slightly with the back of a fork. Add the crumbled feta cheese, chopped fresh parsley, lemon zest, salt, and black pepper. Mix well to combine.

Step 5

On a lightly floured surface, gently roll out the puff pastry sheets to flatten slightly. Cut each sheet into 4 equal squares, yielding 8 squares total.

Step 6

Place a heaping tablespoon of the pea and feta mixture in the center of each square.

Step 7

In another small bowl, whisk together the egg and milk to create an egg wash.

Step 8

Brush the edges of each pastry square with the egg wash, then fold the squares in half diagonally to form triangles. Press the edges firmly with the tines of a fork to seal.

Step 9

Transfer the filled puffs to the prepared baking sheet. Brush the tops with more egg wash for a golden finish.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and flaky.

Step 11

Remove from the oven and allow the puffs to cool slightly on the baking sheet before serving.

Step 12

Serve warm or at room temperature as a snack or appetizer.
