  • 1 cup green beans, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the green beans to the boiling water and cook for 4 minutes.

Step 3

Add the peas to the same pot and continue cooking for an additional 2-3 minutes, until the vegetables are tender but still vibrant green.

Step 4

Drain the peas and beans and immediately transfer them to a bowl of ice water to halt the cooking process and preserve their color.

Step 5

In a small bowl, whisk together the olive oil, lemon juice, lemon zest, honey, Dijon mustard, salt, and black pepper to make the lemon dressing.

Step 6

Remove the peas and beans from the ice water and pat them dry with a clean kitchen towel or paper towel.

Step 7

Place the peas and beans in a large serving bowl and drizzle the lemon dressing over the top.

Step 8

Toss the vegetables gently to coat them evenly with the dressing.

Step 9

Sprinkle the chopped parsley over the top for garnish.

Step 10

Serve immediately or chill in the refrigerator for up to 1 hour before serving. Enjoy!
