Ingredients

  • 1 cup Pearl barley
  • 3 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable stock
  • 0.5 cup White wine
  • 2 cups Cremini mushrooms, sliced
  • 1 teaspoon Thyme, fresh or dried
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Parsley, finely chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and cook, stirring, for 3-4 minutes until softened.

Add the minced garlic and cook for another minute until fragrant.

Stir in the pearl barley and cook for 1-2 minutes to lightly toast the grains.

Pour in the white wine and let it simmer, stirring, until it is mostly absorbed by the barley.
