Ingredients

  • 1.5 cups basmati rice
  • 2.5 cups water
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons curry powder
  • 0.5 teaspoons turmeric powder
  • 1 cup carrots, diced
  • 0.75 cup peas
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps keep the rice fluffy.

Step 2

In a medium saucepan, bring the water and coconut milk to a boil. Add the rinsed rice, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked. Set aside and leave covered.

Step 3

Heat the vegetable oil in a large skillet or wok over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 4

Stir in the minced garlic and ginger. Cook for 1-2 minutes until fragrant.

Step 5

Add the curry powder and turmeric powder to the skillet, stirring constantly for 30 seconds to toast the spices and release their aroma.

Step 6

Add the diced carrots and peas to the skillet. Season with salt and black pepper. Stir to combine and cook for 5-7 minutes until the vegetables are tender.

Step 7

Fluff the cooked rice with a fork and gently fold it into the vegetable mixture, ensuring it is evenly coated with the spices.

Step 8

Drizzle the lemon juice over the curried rice and sprinkle with chopped cilantro.

Step 9

Serve warm as a main dish or alongside your favorite protein.
