Ingredients

  • 5 whole ripe pears
  • 250 grams all-purpose flour
  • 125 grams unsalted butter, chilled
  • 45 milliliters ice-cold water
  • 60 milliliters honey
  • 30 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 15 milliliters lemon juice
  • 1 large egg yolk
  • 15 milliliters milk

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse breadcrumbs.

Step 2

Gradually add the ice-cold water, 1 tablespoon at a time, while mixing. Stop when the dough holds together but is not sticky. Form the dough into a disc, wrap it in plastic, and chill in the refrigerator for at least 30 minutes.

Step 3

Peel, core, and slice the pears into 1/4-inch thick slices. Place them in a large bowl and toss with lemon juice to prevent browning.

Step 4

In a small bowl, mix the honey, brown sugar, ground cinnamon, ground nutmeg, and ground ginger. Pour this aromatic mixture over the pears and toss gently to evenly coat the fruit.

Step 5

Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit into a 9-inch tart or pie pan with a bit of overhang. Carefully transfer the dough to the pan and trim the edges.

Step 6

Arrange the pear slices in the prepared pastry shell in an overlapping, circular pattern. Pour any remaining spiced syrup from the bowl over the pears.

Step 7

In a small bowl, whisk together the egg yolk and milk to create an egg wash. Brush the edges of the pastry with the egg wash for a golden finish.

Step 8

Place the tart in the preheated oven and bake for 40 to 45 minutes, or until the pears are tender and the crust is golden brown.

Step 9

Remove the pie from the oven and let it cool slightly before serving. Serve warm or at room temperature, optionally with a dollop of whipped cream or vanilla ice cream for added indulgence.
