Ingredients

  • 4 pieces ripe but firm pears (such as Bosc or Anjou)
  • 4 cups water
  • 1 cup granulated sugar
  • 2 tablespoons honey
  • 1 piece lemon
  • 1 piece cinnamon stick
  • 4 pieces whole cloves
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 cup light brown sugar
  • 1 pinch sea salt
  • 1 cup whipped cream
  • 4 pieces mint leaves (optional, for garnish)

Directions

Step 1

Peel the pears, leaving the stems intact, and cut a small slice from the bottom of each pear so they can stand upright.

Step 2

In a large saucepan, combine water, granulated sugar, honey, the juice of 1 lemon, the cinnamon stick, cloves, and vanilla extract. Stir to dissolve the sugar.

Step 3

Place the peeled pears into the saucepan and bring the liquid to a simmer over medium heat. Cover and poach the pears for 20-25 minutes, until tender but not falling apart. Turn the pears occasionally for even cooking.

Step 4

While the pears are poaching, prepare the caramel sauce. In a small saucepan, melt the butter over medium heat. Add the light brown sugar and stir constantly until it starts to dissolve.

Step 5

Slowly pour in the heavy cream while stirring, and bring the mixture to a gentle boil. Add a pinch of sea salt and cook for 3-5 minutes until thickened slightly. Remove from heat and set aside.

Step 6

Once the pears are tender, remove them from the poaching liquid and let them cool slightly.

Step 7

To serve, place each pear on a dessert plate. Drizzle generously with warm caramel sauce and add a dollop of whipped cream on the side. Garnish with a mint leaf if desired.

Step 8

Enjoy your Pear Extraordinaire immediately while still warm!
