Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter (cold, cubed)
  • 25 grams Granulated sugar
  • 1 teaspoon Salt
  • 4 tablespoons Cold water
  • 900 grams Ripe pears (peeled, cored, sliced)
  • 90 grams Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cornstarch
  • 80 grams Rolled oats
  • 70 grams All-purpose flour (for topping)
  • 100 grams Brown sugar (for topping)
  • 85 grams Unsalted butter (melted, for topping)

Directions

Step 1

Begin by making the pie crust. In a large mixing bowl, combine 250 grams of all-purpose flour, 25 grams of granulated sugar, and 1 teaspoon of salt.

Step 2

Cut in the cold, cubed butter (125 grams) using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

Step 3

Gradually add 4 tablespoons of cold water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

Preheat the oven to 375°F (190°C) and place a rack in the center of the oven.

Step 5

Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Gently transfer the dough to the dish, trim any excess, and crimp the edges. Set aside.

Step 6

Prepare the pear filling. In a large bowl, combine the sliced pears (900 grams), 90 grams of brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, 1 teaspoon of vanilla extract, and 2 tablespoons of cornstarch. Mix well to coat the pears evenly.

Step 7

Pour the pear filling into the prepared pie crust, spreading it out evenly.

Step 8

Make the crumble topping by mixing 80 grams of rolled oats, 70 grams of all-purpose flour, and 100 grams of brown sugar in a bowl.

Step 9

Add the melted butter (85 grams) to the topping mixture and stir until it forms a crumbly texture.

Step 10

Sprinkle the crumble topping evenly over the pear filling.

Step 11

Place the pie on a baking sheet to catch any drips and bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling.

Step 12

Remove the pie from the oven and let it cool on a wire rack for at least 1 hour before slicing and serving.

Step 13

Serve warm or at room temperature, optionally with whipped cream or a scoop of vanilla ice cream.
