  • 2 large Eggs
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Greek yogurt (plain, non-fat)
  • 0.33 cups Honey
  • 1 teaspoon Vanilla extract
  • 1 cup Pear (ripe, peeled, and diced)
  • 0.75 cups Granola (low-sugar, plain or lightly sweetened)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or lightly grease it with nonstick cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

In a separate bowl, beat the eggs. Add the applesauce, Greek yogurt, honey, and vanilla extract, and whisk the wet ingredients until well combined.
