Ingredients

  • 220 grams all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 150 grams unsalted butter
  • 200 grams brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 120 milliliters milk
  • 2 medium ripe pears
  • 50 grams crystallized ginger
  • 100 grams powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 20cm (8-inch) round cake pan. Line the bottom with parchment paper for easier removal.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt. Set aside.

Step 3

In another large bowl, use an electric mixer to cream the butter and brown sugar until light and fluffy. This should take about 3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually fold in the dry ingredients and milk alternately, beginning and ending with the dry ingredients. Mix just until combined.

Step 6

Peel, core, and dice the pears into small chunks. Dice the crystallized ginger finely.

Step 7

Gently fold the diced pears and crystallized ginger into the batter, ensuring they’re evenly distributed.

Step 8

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 55-60 minutes, or until a skewer inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 11

To make the maple glaze, whisk together the powdered sugar, maple syrup, and water in a small bowl until smooth. If the glaze is too thick, add a drop more water.

Step 12

Once the cake has cooled completely, drizzle the maple glaze over the top using a spoon or piping bag.

Step 13

Let the glaze set for about 10 minutes before slicing and serving. Enjoy with a cup of tea or coffee.
