Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 pieces Ripe pears, thinly sliced
  • 1 tablespoon Honey
  • 1 teaspoon Balsamic vinegar
  • 1 cup Blue cheese, crumbled
  • 1 teaspoon Fresh thyme leaves (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the pork chops to the skillet and cook for 4-5 minutes per side until golden brown and cooked through to an internal temperature of 145°F (63°C). Remove the pork chops from the skillet and set them aside to rest.

Step 3

In the same skillet, lower the heat to medium and add the butter. Once melted, add the sliced pears and cook for 4-5 minutes until they are softened and slightly caramelized.

Step 4

Drizzle the honey and balsamic vinegar over the pears and stir gently to combine. Cook for an additional 1-2 minutes until the mixture is slightly syrupy.

Return the pork chops to the skillet, spooning the pear mixture over the top of each chop. Sprinkle the crumbled blue cheese evenly over the pork chops and pears.
