  • 3 tablespoons Peanut butter (smooth or crunchy)
  • 4 tablespoons Coconut milk
  • 1 teaspoon Sriracha or chili sauce (optional)
  • 4 pieces Tortilla wraps (large)
  • 1 medium Cucumber, julienned
  • 1 medium Carrot, julienned
  • 4 large Lettuce leaves
  • 2 tablespoons Fresh cilantro
  • 1 tablespoon Sesame seeds (optional)
  • 2 tablespoons Cooking oil

Directions

Step 1

Cut the pork tenderloin into thin strips about 1/4 inch thick.

In a large bowl, combine 2 tablespoons soy sauce, 1 tablespoon lime juice, honey, minced garlic, and ground ginger to create the marinade.

Add the pork strips to the marinade, ensuring the pieces are evenly coated. Cover and refrigerate for 15-20 minutes.
