Ingredients

  • 1 cup green grapes
  • 1 cup red grapes
  • 1 cup pineapple chunks
  • 1 cup strawberries
  • 2 medium bananas
  • 2 tablespoons peanut butter
  • 1 cup Greek yogurt
  • 2 teaspoons honey
  • 1 teaspoon lemon juice
  • 1 quarter cup roasted peanuts
  • 1 tablespoon fresh mint leaves (optional)

Directions

Step 1

Rinse the green grapes and red grapes under cool running water. Pat them dry with a clean kitchen towel.

Step 2

Slice the grapes in half and place them in a large mixing bowl.

Step 3

Cut the pineapple chunks into bite-sized pieces if they are too large, and add them to the bowl.

Step 4

Rinse and hull the strawberries, then slice them into quarters. Add them to the bowl.

Step 5

Peel and slice the bananas into thick coins, and toss them gently with the lemon juice to prevent browning. Add them to the fruit mixture.

Step 6

In a small mixing bowl, whisk together the peanut butter, Greek yogurt, and honey until smooth and creamy.

Step 7

Pour the peanut butter-yogurt dressing over the prepared fruits in the large bowl.

Step 8

Gently toss the salad with a large spoon or spatula to coat all the fruits evenly in the dressing.

Step 9

Roughly chop the roasted peanuts and sprinkle them on top of the salad for a crunchy texture.

Step 10

Garnish with freshly chopped mint leaves if desired. Serve immediately or chill in the refrigerator for up to 1 hour before serving.
