Ingredients

  • 1 lb Chicken breasts
  • 8 oz Rice vermicelli noodles

  • 1 cup Coconut milk
  • 3 tbsp Soy sauce
  • 2 tbsp Lime juice
  • 1 tbsp Brown sugar
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 tbsp Vegetable oil
  • 3 Scallions
  • 0.25 cup Crushed peanuts
  • 0.25 cup Fresh cilantro
  • 0.25 tsp Red chili flakes
  • 4 cups Water
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Prepare the vermicelli noodles by bringing 4 cups of water to a boil in a large pot. Turn off the heat, add the noodles, and let them soak for 4-5 minutes until tender. Drain and set aside.

Cut the chicken breasts into thin strips, season with salt and black pepper, and set aside.
