Ingredients

  • 2 cups Raw peanuts
  • 2 cups Granulated sugar
  • 0.5 cups Light corn syrup
  • 0.25 cups Water
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 5 drops Red food coloring
  • 0.25 teaspoons Salt

Directions

Step 1

Line a baking sheet with parchment paper or a silicone mat, and lightly grease it. Set aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Cook over medium heat, stirring occasionally, until the sugar dissolves completely.

Step 3

Stir in the raw peanuts and continue cooking the mixture over medium heat. Stir frequently to ensure the peanuts are evenly coated as the sugar syrup begins to thicken.

Step 4

Attach a candy thermometer to the side of the saucepan and cook the mixture, stirring occasionally, until it reaches 290°F (soft crack stage).

Step 5

Remove the saucepan from the heat and quickly stir in the butter, vanilla extract, salt, and red food coloring until fully combined.

Step 6

Working quickly, drop spoonfuls of the mixture onto the prepared baking sheet, spreading each one slightly to form patties. Be cautious, as the mixture will be very hot.

Step 7

Allow the peanut patties to cool completely at room temperature. They will harden as they cool.

Step 8

Once cooled and set, remove the patties from the parchment paper. Store them in an airtight container at room temperature for up to two weeks.
