Ingredients

  • 500 g Chicken breast
  • 3 tbsp Peanut butter (creamy, unsweetened)
  • 2 tbsp Miso paste (white or yellow)
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1.5 tbsp Honey
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1 tsp Sesame oil
  • 1 whole Lime (juice and zest)
  • 2 tbsp Olive oil (or neutral oil, for grilling)
  • 2 stalks Scallions, chopped (optional, for garnish)
  • 1 tbsp Sesame seeds (optional, for garnish)

Directions

Step 1

Cut the chicken breast into bite-sized chunks (approximately 1-inch pieces) and set them aside in a bowl.

Step 2

In a medium mixing bowl, combine peanut butter, miso paste, soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and the juice and zest of one lime. Whisk together until smooth and fully combined.

Step 3

Reserve 3 tablespoons of the marinade in a small bowl for basting later.

Step 4

Pour the remaining marinade over the chicken chunks, ensuring they are well coated. Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
