Ingredients

  • 115 grams unsalted butter
  • 170 grams semi-sweet chocolate chips
  • 200 grams granulated sugar
  • 100 grams brown sugar
  • 3 pieces large eggs
  • 2 teaspoons vanilla extract
  • 95 grams all-purpose flour
  • 30 grams unsweetened cocoa powder
  • 0.5 teaspoons salt
  • 120 grams smooth peanut butter
  • 75 grams roasted peanuts (chopped)

Directions

Step 1

Preheat the oven to 175°C (350°F). Grease and line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a medium saucepan over low heat, melt the butter and semi-sweet chocolate chips together, stirring until smooth. Remove from heat and allow to cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar and brown sugar. Add the melted chocolate mixture and whisk until fully combined.

Step 4

Stir in the eggs one at a time, mixing well after each addition. Add the vanilla extract and stir to combine.

Step 5

In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Step 6

Pour the batter into the prepared baking pan and spread it evenly.

Step 7

Heat the peanut butter in the microwave for 20-30 seconds to loosen it slightly. Drop spoonfuls of peanut butter onto the surface of the brownie batter, then use a knife or skewer to create swirls.

Step 8

Sprinkle the chopped roasted peanuts evenly over the top of the batter.

Step 9

Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

Step 10

Remove from the oven and let the brownies cool completely in the pan on a wire rack.

Step 11

Once cooled, lift the brownies out of the pan using the parchment paper overhang. Slice into 12 pieces and serve. Enjoy!
