Ingredients

  • 4 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 1.5 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 6 cups rice cereal
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup crushed peanuts (optional)

Directions

Step 1

Line a 9x13-inch baking dish with parchment paper and lightly grease it with a non-stick spray. Set aside.

Step 2

In a large saucepan, melt the butter over medium-low heat. Once melted, add the mini marshmallows and stir continuously until they are completely melted and smooth.

Step 3

Reduce the heat to low and stir in the peanut butter and vanilla extract until fully combined and smooth.

Step 4

Remove the pan from the heat and gently fold in the rice cereal, ensuring that it is evenly coated with the marshmallow-peanut butter mixture.

Step 5

Transfer the mixture into the prepared baking dish. Use a spatula or the back of a spoon to press it firmly and evenly into the pan. Be careful not to overpack, which could make the squares too dense.

Step 6

In a microwave-safe bowl, melt the semi-sweet chocolate chips in 20-second increments, stirring after each interval, until smooth and melted.

Step 7

Spread the melted chocolate evenly over the pressed rice cereal mixture. Sprinkle crushed peanuts on top if desired for extra crunch and flavor.

Step 8

Allow the Peanut Krispie Squares to cool and set, either at room temperature for about 1 hour or in the refrigerator for 30 minutes.

Step 9

Once set, lift the entire block out of the pan using the parchment paper. Slice into 16 squares and serve.

Step 10

Store any remaining squares in an airtight container at room temperature for up to 4 days or in the refrigerator for up to 1 week.
