  • 4 pieces Chicken breasts (boneless, skinless)

  • 2 tablespoons Vegetable oil
  • 1 tablespoon Fresh ginger (grated)
  • 2 cloves Garlic (minced)
  • 400 milliliters Coconut milk (unsweetened)
  • 0.5 cup Peanut butter (creamy, unsweetened)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Honey
  • 0.5 teaspoon Red chili flakes
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro (fresh, chopped)
  • 2 tablespoons Roasted peanuts (chopped, for garnish)
  • 4 cups Steamed rice (for serving)

Directions

Step 1

Season the chicken breasts with salt and ground black pepper on both sides.

Heat the vegetable oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove and set aside.
