  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cups dark chocolate chips
  • 1 teaspoon coconut oil
  • 0.25 cups chopped roasted peanuts

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded coconut, peanut butter, honey, vanilla extract, and salt. Stir until the mixture is evenly combined and forms a sticky dough.

Step 3

Using a small cookie scoop or your hands, form the dough into 1-inch balls. Place them onto the parchment-lined baking sheet, leaving a bit of space between each ball.

Bake the balls in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let them cool completely on the baking sheet.
