  • 200 ml Low-sodium chicken broth
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 medium Carrot (sliced into thin rounds)
  • 1 medium Red bell pepper (sliced thinly)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 servings Cooked brown rice (for serving)

Directions

Step 1

Cut the chicken breast into bite-sized pieces and season lightly with salt and black pepper. Set aside.
