Ingredients

  • 1 cup creamy peanut butter
  • 0.5 cup honey or maple syrup
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1.5 cups quick oats
  • 1 cup shredded unsweetened coconut
  • 0.5 cup chopped nuts (optional)
  • 0.5 cup dark chocolate chips (optional, for topping)

Directions

Step 1

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Step 2

In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and coconut oil. Stir occasionally until the mixture is smooth and completely melted.

Step 3

Remove the saucepan from heat and stir in the vanilla extract.

Step 4

In a large mixing bowl, combine the quick oats, shredded coconut, and chopped nuts (if using). Pour the melted peanut butter mixture over the dry ingredients and mix well until evenly coated.

Step 5

Transfer the mixture to the prepared baking dish. Use a spatula or the back of a spoon to press it down firmly and evenly into the dish.

Step 6

If using dark chocolate chips for a topping, melt them in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Drizzle or spread the melted chocolate over the pressed mixture.

Refrigerate the bars for at least 1 hour, or until firm.
