  • 125 grams Unsalted butter, softened
  • 60 grams Powdered (confectioner's) sugar
  • 1 teaspoon Vanilla extract
  • 180 grams Plain (all-purpose) flour
  • 45 grams Cornstarch
  • 60 grams Creamy peanut butter
  • 50 grams Unsalted butter (for filling), softened
  • 100 grams Powdered (confectioner's) sugar (for filling)

Directions

Step 1

Preheat your oven to 180°C (350°F), and line two baking trays with parchment paper.

Step 2

Using a hand or stand mixer, cream the softened butter and powdered sugar together in a bowl until light and fluffy.

Step 3

Mix in the vanilla extract until well combined.

Step 4

Sift the plain flour and cornstarch into the bowl, and gradually mix until the dough comes together.

Take small portions of dough (about 2 teaspoons each) and roll them into balls. Place them on the prepared baking trays, leaving space between each piece.
