Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup natural creamy peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon soy sauce
  • 2 tablespoons water
  • 2 tablespoons chopped peanuts
  • 2 tablespoons fresh cilantro

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

Wash and scrub the sweet potatoes, then pat them dry. Slice them lengthwise into halves.

Step 3

Place the sweet potato halves on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Rub to coat evenly.

Step 4

Bake the sweet potatoes, cut side down, in the preheated oven for 30-35 minutes, or until tender and caramelized around the edges.

Step 5

While the sweet potatoes are baking, prepare the peanut butter sauce. In a small bowl, whisk together the peanut butter, lime juice, maple syrup, soy sauce, and water until smooth and well combined.

Step 6

Once the sweet potatoes are done baking, remove them from the oven and transfer them to a serving plate.

Step 7

Drizzle the peanut butter sauce generously over the baked sweet potatoes.

Step 8

Sprinkle with chopped peanuts and fresh cilantro for garnish.

Step 9

Serve warm and enjoy!
