  • 1 cup Canned diced tomatoes
  • 1 medium Sweet potato, peeled and diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro (for garnish)
  • 2 tablespoons Chopped peanuts (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 3-4 minutes until softened.
