Ingredients

  • 1 cup popcorn kernels
  • 2 tablespoons vegetable oil
  • 3 tablespoons peanut butter
  • 0.33 cup honey
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cup chopped peanuts (optional)
  • 0.25 cup mini chocolate chips (optional)

Directions

Step 1

Heat a large, heavy-bottomed pot over medium heat. Add the vegetable oil and 3 popcorn kernels to the pot. Cover with a lid and wait for the kernels to pop as a test.

Step 2

Once the test kernels have popped, add the rest of the popcorn kernels to the pot in an even layer. Cover with the lid, leaving it slightly ajar to let steam escape. Shake the pot occasionally to prevent burning. Remove from heat as soon as the popping slows down significantly.

Step 3

Transfer the freshly popped popcorn to a large mixing bowl, making sure to discard any unpopped kernels.

Step 4

In a small saucepan over medium-low heat, combine the peanut butter, honey, vanilla extract, and salt. Stir continuously until the mixture is smooth and well combined, about 3-4 minutes. Remove from heat.

Step 5

Pour the peanut butter mixture over the popcorn. Using a spatula, gently toss the popcorn until all pieces are evenly coated.

Step 6

Optional: Fold in the chopped peanuts and mini chocolate chips for added crunch and sweetness.

Step 7

Spread the popcorn mixture onto a baking sheet lined with parchment paper, ensuring it is in a single layer. Let cool for 10-15 minutes to allow the coating to set.

Step 8

Once set, break up any large clusters and serve immediately. Store leftovers in an airtight container at room temperature for up to a week.
