Ingredients

  • 10 cups Popped popcorn
  • 0.5 cup Light corn syrup
  • 0.5 cup Granulated sugar
  • 0.75 cup Creamy peanut butter
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt

Directions

Step 1

Prepare a large mixing bowl and add the popped popcorn. Remove any unpopped kernels to prevent biting into them later.

Step 2

In a medium-sized saucepan over medium heat, combine the light corn syrup, granulated sugar, and salt. Stir until the sugar dissolves completely and the mixture starts to bubble, about 3-4 minutes.

Step 3

Reduce the heat to low, then stir in the creamy peanut butter and vanilla extract. Continue stirring until the mixture is smooth and evenly combined.

Step 4

Remove the saucepan from the heat and pour the peanut butter mixture evenly over the popped popcorn in the large mixing bowl.

Step 5

Using a spatula or wooden spoon, toss the popcorn gently to coat every piece with the peanut butter mixture. Be careful, as the mixture will be hot at this stage.

Step 6

Once the popcorn is cool enough to handle but still warm, grease your hands lightly with butter and start forming the popcorn mixture into balls about the size of your palm or a tennis ball.

Step 7

Set the popcorn balls on a sheet of parchment or wax paper to cool completely and firm up. This should take about 15-20 minutes.

Step 8

Serve immediately or store the popcorn balls in an airtight container at room temperature for up to 3 days.
