Ingredients

  • 115 grams Unsalted butter
  • 150 grams Light brown sugar
  • 50 grams Granulated sugar
  • 150 grams Creamy peanut butter
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 125 grams All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 150 grams Quick oats
  • 50 grams Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the room-temperature butter, light brown sugar, and granulated sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Mix in the peanut butter, vanilla extract, and egg until fully combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.

Step 6

Using a spatula, gently fold in the quick oats and mini chocolate chips (if using).

Step 7

Scoop out tablespoon-sized portions of the dough and roll them into balls. Place them onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Flatten each ball lightly with the back of a fork to create crosshatch marks.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.

Step 10

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to 5 days.
