  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.75 cup Peanut butter
  • 0.5 cup Brown sugar
  • 0.25 cup Honey
  • 2 large Eggs
  • 1 cup Milk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Mix well and set aside.

In another bowl, whisk together the peanut butter, brown sugar, and honey until smooth and creamy.

Add the eggs to the wet mixture, one at a time, whisking well after each addition.

Stir in the milk and vanilla extract until fully incorporated.
