Ingredients

  • 2 cups Old-fashioned oats
  • 1 cup Creamy peanut butter
  • 0.5 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon (optional)
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

In a large mixing bowl, combine the old-fashioned oats, ground cinnamon (if using), and mini chocolate chips (if using). Mix well to distribute the dry ingredients evenly.

Step 2

In a microwave-safe bowl, add the creamy peanut butter and honey. Microwave in 15-second intervals, stirring each time, until the mixture is warm and smooth but not overheated.

Step 3

Add the vanilla extract to the peanut butter and honey mixture, stirring to combine.

Step 4

Pour the wet mixture over the dry oat mixture. Using a spatula, stir until all the oats are evenly coated and the ingredients are well combined.

Step 5

Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the pan and spread it out evenly.

Step 6

Using the back of the spatula or clean hands, press the mixture firmly into the pan to ensure the bars hold together once cooled.

Step 7

Cover the pan with plastic wrap or aluminum foil and refrigerate for at least 2 hours, or until the mixture is firm and set.

Step 8

Once set, lift the bars out of the pan using the parchment paper overhang. Place them on a cutting board and slice into 12 equal pieces.

Step 9

Store the bars in an airtight container in the fridge for up to one week or in the freezer for up to one month.
