Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cups Unsweetened cocoa powder
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Vegetable oil
  • 1 cups Milk
  • 1 large Egg
  • 1.5 teaspoons Vanilla extract
  • 0.75 cups Boiling water
  • 1.5 cups Creamy peanut butter
  • 2 cups Powdered sugar
  • 8 ounces Cream cheese, softened
  • 4 tablespoons Butter, softened
  • 0.25 cups Heavy cream
  • 1.5 cups Semisweet chocolate chips
  • 3 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easier removal.

Step 2

In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt.

Step 3

Add the vegetable oil, milk, egg, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4

Gradually stir in the boiling water until the batter is smooth and runny. Do not overmix.

Step 5

Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 7

For the peanut butter filling, beat the cream cheese, butter, and powdered sugar in a large bowl until fluffy and smooth.

Step 8

Add the peanut butter and heavy cream, beating until well blended and creamy. Set aside.

Step 9

To make the chocolate ganache, heat the heavy cream in a small saucepan over medium heat until it just starts to simmer. Remove from heat.

Step 10

Add the chocolate chips and unsalted butter to the hot cream. Let sit for 2 minutes, then stir until smooth and glossy. Let the ganache cool slightly.

Step 11

To assemble the cake, place one layer of the cooled chocolate cake on a serving plate. Spread an even layer of the peanut butter filling on top.

Step 12

Place the second cake layer on top and spread the remaining peanut butter filling evenly over the sides and top.

Step 13

Pour the cooled ganache over the assembled cake, allowing it to drip down the sides for a dramatic effect.

Step 14

Refrigerate for at least 30 minutes to let the ganache set before slicing. Serve and enjoy!
