Ingredients

  • 2 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 0.5 cups brown sugar, packed
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 2.5 cups powdered sugar
  • 0.5 cups unsalted butter, softened (for frosting)
  • 0.5 cups creamy peanut butter (for frosting)
  • 2 tablespoons heavy cream
  • 0.25 cups optional chopped peanuts (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.

Step 3

In a large mixing bowl, use an electric mixer to combine the softened butter and peanut butter until creamy, about 2 minutes.

Step 4

Add the granulated sugar and brown sugar to the peanut butter mixture, and beat on medium speed until light and fluffy, about 3 minutes.

Step 5

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, mix in the vanilla extract.

Step 6

Reduce the mixer speed to low and alternate adding the dry ingredients in three parts and the milk in two parts, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.

Step 7

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

Step 10

While the cakes are cooling, prepare the frosting. In a large bowl, beat the powdered sugar, softened butter, and 1/2 cup of peanut butter until smooth.

Step 11

Add the heavy cream one tablespoon at a time, mixing until the frosting reaches a spreadable consistency.

Step 12

Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top and frost the entire cake with the remaining frosting.

Step 13

If desired, sprinkle chopped peanuts on top for garnish.

Step 14

Refrigerate the cake for 20 minutes to help set the frosting before serving. Slice and enjoy!
