Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cup Unsweetened cocoa powder
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 Eggs (large)
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 cup Creamy peanut butter
  • 0.5 cup Unsalted butter (softened)
  • 3 cups Powdered sugar
  • 3 tablespoons Heavy cream
  • 1.5 cups Peanut butter cups (chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4

Carefully stir in the boiling water. The batter will be thin; this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 6

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 7

While the cakes cool, prepare the frosting. In a large mixing bowl, beat the peanut butter and softened butter together until smooth and creamy.

Step 8

Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Add the heavy cream and beat until the frosting is light and fluffy.

Step 9

Once the cakes are completely cool, place one layer on a serving plate. Spread a thick layer of peanut butter frosting over the top.

Step 10

Add the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.

Step 11

Gently press the chopped peanut butter cups along the sides and sprinkle some on top as garnish.

Step 12

Chill the cake for 20-30 minutes before serving to allow the frosting to set. Slice and enjoy!
