Ingredients

  • 2 cups Heavy cream
  • 0.5 cup Smooth peanut butter
  • 0.25 cup Granulated sugar
  • 4 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 4 tablespoons Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer (do not let it boil).

Step 3

Remove the saucepan from the heat and whisk in the peanut butter until smooth and fully incorporated.

Step 4

In a separate bowl, whisk together the sugar, egg yolks, vanilla extract, and salt until the mixture is pale and creamy.

Step 5

Slowly pour the warm peanut butter-cream mixture into the egg yolk mixture, whisking constantly to avoid curdling the eggs.

Step 6

Strain the mixture through a fine mesh sieve into a clean bowl to remove any lumps.

Step 7

Divide the custard mixture evenly among four 6-ounce ramekins.

Step 8

Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.

Step 9

Bake for 30–35 minutes, or until the custards are set but still slightly jiggly in the center.

Step 10

Carefully remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight, until completely chilled.

Step 11

Before serving, sprinkle 1 tablespoon of sugar evenly over the top of each custard.

Step 12

Use a kitchen torch to caramelize the sugar until it melts and forms a crisp, golden-brown topping. Allow the topping to cool for 1–2 minutes before serving.
