Ingredients

  • 1 cup Creamy peanut butter
  • 0.5 cup Unsweetened shredded coconut
  • 1 cup Rolled oats
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix well until smooth and creamy.

Step 3

Add the eggs and vanilla extract to the peanut butter mixture and stir until fully incorporated.

Step 4

In a separate bowl, combine the rolled oats, shredded coconut, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring until a thick and sticky dough forms.

Step 6

Using a tablespoon or a cookie scoop, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Gently flatten the dough balls with the back of a spoon or your palm for even baking.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden. The centers may still look slightly soft—this is okay.

Step 9

Remove the cookies from the oven and let them rest on the baking sheets for 5 minutes to firm up before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy your Peanut Butter Coconut Oat Cookies with a glass of milk or a cup of tea!
