Ingredients

  • 1 cup Creamy peanut butter
  • 0.5 cup Honey or maple syrup
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 2 cups Shredded unsweetened coconut
  • 1 cup Rolled oats
  • 0.75 cup Dark chocolate chips
  • 0.25 cup Chopped peanuts (optional)
  • 0.25 teaspoon Sea salt (optional)

Directions

Step 1

Line an 8x8 inch square pan with parchment paper and set aside.

Step 2

In a medium saucepan over low heat, combine the peanut butter, honey or maple syrup, and coconut oil. Stir constantly until the mixture is smooth and well combined. Remove from heat.

Step 3

Stir in the vanilla extract, shredded coconut, and rolled oats. Mix well until all the dry ingredients are evenly coated.

Step 4

Press the mixture firmly and evenly into the prepared pan using the back of a spoon or a spatula to create a solid layer.

In a microwave-safe bowl, melt the dark chocolate chips in 15-second intervals, stirring well after each interval, until smooth and glossy.
