  • 500 g Chicken breast
  • 60 g Peanut butter (smooth or chunky)
  • 30 ml Soy sauce
  • 15 ml Honey
  • 15 ml Lime juice
  • 2 cloves Garlic
  • 5 g Ginger (grated)
  • 10 g Brown sugar
  • 30 ml Coconut milk
  • 1 tsp Crushed red pepper flakes
  • 15 ml Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 8 pieces Skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning if using wooden ones.

Step 2

Cut the chicken breast into bite-sized cubes, roughly 2 to 3 cm thick.

Step 3

In a mixing bowl, combine peanut butter, soy sauce, honey, lime juice, minced garlic, grated ginger, brown sugar, coconut milk, crushed red pepper flakes, vegetable oil, salt, and black pepper. Whisk until smooth and well combined.

Reserve 1/4 cup of the marinade for later use as a dipping sauce.
