Ingredients

  • 1 cup Creamy peanut butter
  • 0.5 cup Unsalted butter (softened)
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 cups Semi-sweet chocolate chips
  • 1 tablespoon Coconut oil (or vegetable shortening)

Directions

Step 1

In a large mixing bowl, combine the creamy peanut butter and softened butter using a hand mixer or stand mixer until smooth and well incorporated.

Step 2

Gradually add the powdered sugar, one cup at a time, mixing on low speed until fully combined and the dough becomes thick and slightly crumbly.

Step 3

Stir in the vanilla extract and mix until evenly distributed.

Step 4

Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper or a silicone baking mat.

Step 5

Chill the peanut butter balls in the refrigerator for about 30 minutes or until firm.

Step 6

While the peanut butter balls are chilling, melt the semi-sweet chocolate chips and the coconut oil together in a microwave-safe bowl. Heat in 30-second increments, stirring after each, until the chocolate is fully melted and smooth.

Step 7

Remove the chilled peanut butter balls from the refrigerator. Using a toothpick, dip each ball into the melted chocolate, leaving a small circle of peanut butter visible at the top to mimic the classic buckeye look.

Step 8

Let the excess chocolate drip off, then place the dipped buckeyes back onto the lined baking sheet.

Step 9

Once all the buckeyes are dipped, gently smooth over the toothpick hole using your finger or a small spatula if desired.

Step 10

Refrigerate the dipped buckeyes for at least 1 hour, or until the chocolate is fully set.

Step 11

Store the buckeyes in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months. Serve chilled or at room temperature and enjoy!
