Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 large Overripe bananas
  • 0.5 cup Peanut butter (creamy or chunky)
  • 0.5 cup Brown sugar (or coconut sugar for vegan)
  • 0.25 cup Coconut oil (melted, or substitute melted butter if not vegan)
  • 1 teaspoon Vanilla extract
  • 0.75 cup Non-dairy chocolate chips (or regular chocolate chips if not vegan)
  • 0.25 cup Optional: Chopped peanuts for topping

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper or lightly grease it.

Step 2

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, mash the bananas with a fork until smooth. Add the peanut butter, brown sugar, melted coconut oil, and vanilla extract. Mix until well combined.

Step 4

Gradually add the dry ingredients into the wet mixture, stirring just until combined. Be careful not to overmix.

Step 5

Fold in the chocolate chips, reserving a small handful to sprinkle on top if desired.

Step 6

Pour the batter into the prepared baking pan and smooth the top with a spatula. Sprinkle the reserved chocolate chips and chopped peanuts (if using) over the batter.

Step 7

Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake to ensure the brownies stay fudgy.

Step 8

Remove from the oven and let the brownies cool completely in the pan on a wire rack before slicing into squares.

Step 9

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
