Ingredients

  • 1 cup natural peanut butter
  • 0.5 cup honey
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 0.75 cup dried cranberries
  • 0.5 cup chopped almonds
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Directions

Step 1

Prepare an 8x8-inch square baking pan by lining it with parchment paper. Leave an overhang on the sides for easy removal.

Step 2

In a medium microwave-safe bowl, combine the peanut butter and honey. Microwave on high for 30 seconds to 1 minute, stirring halfway through, until the mixture is warm and easy to stir. Alternatively, heat on the stovetop over low heat.

Step 3

Stir in the vanilla extract until well combined.

Step 4

In a large mixing bowl, combine the rolled oats, dried cranberries, chopped almonds, ground cinnamon, and salt.

Step 5

Pour the warm peanut butter and honey mixture over the dry ingredients. Stir with a spatula or wooden spoon until everything is evenly coated and combined.

Step 6

Transfer the mixture to the prepared baking pan. Use the back of a spatula or your hands (lightly greased to prevent sticking) to press the mixture firmly and evenly into the pan.
