Ingredients

  • 1 cup Granulated sugar
  • 1 cup Light corn syrup
  • 1 4 cup Water
  • 2 tablespoons Unsalted butter
  • 1.5 cups Roasted, unsalted peanuts
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 1 4 teaspoon Salt

Directions

Step 1

Grease a large baking sheet with butter or line it with a silicone baking mat. Set aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir gently over medium heat until the sugar is fully dissolved.

Step 3

Increase the heat to medium-high and bring the mixture to a boil. Do not stir while it boils. Use a candy thermometer and cook until the mixture reaches 300°F (hard crack stage). This will take approximately 10-15 minutes.

Step 4

Remove the saucepan from the heat and immediately stir in the unsalted butter, roasted peanuts, baking soda, vanilla extract, and salt. The mixture will bubble and foam as you stir.
